Coconut Valentines Day Buckeyes
Looking for a last minute Valentine's Day treat to share with someone special? Look no further than this quick, cute Coconut Valentines Day Buckeyes recipe that fits perfectly into a heart-shaped box. 

Ingredients:

1 cup Field Day Organic Smooth and Salted Peanut Butter or Once Again Organic Creamy Sunflower Butter
5 Tablespoons Kalona Unsalted Butter, Pasture-Raised
2 cups powdered sugar or Swerve Confectioners Sugar Replacement
1 teaspoon vanilla extract
2 cups semisweet chocolate
2 Tablespoons coconut oil
a handful of coconut flakes
a pinch of sea salt

Directions:

1. Mix peanut butter, butter, and vanilla together with an electric mixer.
2. Add your powdered sugar and mix on low. You can use a spatula to get it all combined in one place if the ingredients get messy.
3. Scoop up the mixture by the tablespoon and roll into ball shapes.
4. Move these to a baking sheet and refrigerate for 30 minutes.
5. Add chocolate and coconut oil to a medium bowl and melt on the lowest heat, stirring constantly until melted. If it gets too hot, move off the heat in increments. Then, allow it to cool at room temp.
6. Use a toothpick to dip the peanut butter balls into the chocolate and top with optional sea salt and/or coconut flakes. Chill in the fridge, once again for 10 minutes, to allow the coating to harden. Package in a heart-shaped box and share with a loved one!
