Go-To Chicken Soup on a Sick Day
Feeling under the weather? This chicken soup is full of all the stuff you need to feel better, with none of the stuff you don't want. Warm soup is great for soothing a sore throat and helping decongest a stuffy head. Every single ingredient is rich with immune-supportive vitamins and nutrients.
For a vegan alternative, replace the chicken and broth with water and this vegan bouillon, quinoa and a drained, rinsed can of black beans.

Servings:

Ingredients:

a drizzle of Ellyndale Avocado Cooking Oil
1-inch of ginger, grated
3 cloves garlic, minced
1/2 onion, sliced or chopped
2 packs Bonified Provisions Organic Chicken Bone Broth
1/2 cup sweet potato, chopped
1/2 cup shitake or portabella mushrooms, sliced
1/2 cup organic kale, chopped and deveined
1/2 cup shredded carrots
1/2 cup cooked, shredded chicken

Directions:

1. Heat a large soup pot on medium-high. Add cooking oil, ginger, garlic, and onion and cook until fragrant. 
2. Add chicken broth, sweet potato, mushrooms, kale, and carrots and simmer on low for 30 minutes to infuse the flavor. 
3. Finally, add the pre-cooked chicken and allow it to simmer until warmed. 
4. Inhale the aroma from this healing soup, to help soothe your nose and sinuses. Then, enjoy--we hope you feel better soon!
